  • Instructions:

    1. Cut the tofu into 1-inch cubes.

    2. Heat the vegetable oil in a large skillet over medium heat.

    3. Add the onion, green bell pepper, red bell pepper, carrots, and celery to the skillet. Cook until the vegetables are softened, about 5 minutes.

    4. Add the garlic and ginger to the skillet and cook for 1 minute more.

    5. Add the soy sauce, rice vinegar, sugar, and cornstarch to the skillet. Stir until the sauce is thickened, about 1 minute.

    6. Add the tofu to the skillet and cook until it is heated through, about 5 minutes.

    7. Stir in the green onions and cilantro.

    8. Serve the mapo tofu over rice.
