The S Bomb Roll is a legendary sushi roll created by Chef Peter Chang of the Peter Chang Restaurant Group. It is a massive, over-the-top roll that has become a cult favorite among sushi enthusiasts.

Ingredients:

  • 1 pound sushi rice
  • 1 cup rice vinegar
  • 1/4 cup sugar
  • 1/4 cup salt
  • 1 pound tuna, sashimi-grade
  • 1 pound salmon, sashimi-grade
  • 1 pound yellowtail, sashimi-grade
  • 1 pound escolar, sashimi-grade
  • 1 pound hamachi, sashimi-grade
  • 1 pound uni, fresh
  • 1 pound ikura, fresh
  • 1 pound tobiko, fresh
  • 1 pound masago, fresh
  • 1 pound avocado, ripe
  • 1 pound cucumber, peeled and seeded
  • 1 pound carrots, peeled and julienned
  • 1 pound daikon radish, peeled and julienned
  • 1 pound asparagus, blanched
  • 1 pound snow peas, blanched
  • 1 pound bean sprouts, blanched
  • 1 pound pickled ginger
  • 1 pound wasabi paste
  • 1 pound soy sauce
  • 1 pound spicy mayo
  • 1 pound eel sauce
  • 1 pound teriyaki sauce
  • 1 pound tempura flakes
  • 1 pound sesame seeds
  • Instructions:

    1. Cook the sushi rice according to package directions.

    2. Combine the rice vinegar, sugar, and salt in a small saucepan and bring to a simmer. Remove from heat and let cool.

    3. Pour the vinegar mixture over the cooked rice and stir to combine.

    4. Let the rice cool to room temperature.

    5. Cut the tuna, salmon, yellowtail, escolar, and hamachi into thin slices.

    6. Spread a thin layer of rice onto a bamboo rolling mat.

    7. Arrange the fish slices, uni, ikura, tobiko, masago, avocado, cucumber, carrots, daikon radish, asparagus, snow peas, and bean sprouts on top of the rice.

    8. Roll up the mat tightly, starting from the bottom and working your way to the top.

    9. Cut the roll into 8 pieces.

    10. Serve with pickled ginger, wasabi paste, soy sauce, spicy mayo, eel sauce, teriyaki sauce, tempura flakes, and sesame seeds.
