    1 tablespoon of rice vinegar

    1 tablespoon of sugar

    1 tablespoon of cornstarch

  • For frying the tofu
  • 1 cup of cornstarch

    1/4 cup of water

    Salt and pepper to taste

    First, drain the tofu and press it to remove excess moisture. Cut the tofu into cubes.

    Combine the cornstarch, water, salt, and pepper in a shallow dish. Add the tofu cubes and toss to coat.

    Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden brown and crispy on all sides. Remove the tofu from the skillet and set it aside.

    In the same skillet, add the garlic, ginger, and chili peppers. Cook for 1-2 minutes, until fragrant.

    In a small bowl, whisk together the soy sauce, rice vinegar, sugar, and cornstarch. Add the sauce to the skillet and cook until thickened.

    Add the fried tofu back into the skillet and toss to coat in the sauce. Stir in the peanuts or cashews and green onions.

    Serve the Kung Pao Tofu over rice and enjoy!
