  • 2 tbsp of olive oil
  • 2 lemons, halved
  • 1-2 beers or 4-6 cups of water
  • Salt to taste
  • Chopped parsley and lemon wedges for garnish
  • Instructions:

    1. In a large pot or stockpot, heat the olive oil over medium-high heat. Add the sausage and cook until browned, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside.

    2. Add the onions and garlic to the pot and cook until softened, about 3-5 minutes.

    3. Add the potatoes, corn, and Seasonings (Old Bay, paprika, black pepper, cayenne pepper) to the pot and stir to combine. Add the beers or water and bring to a boil.

    4. Reduce the heat to medium-low, cover the pot, and let simmer for 10-15 minutes, or until the potatoes are just beginning to become tender.

    5. Add the shrimp and sausage back to the pot and stir to combine. Cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through and the potatoes are tender.

    6. Add the lemon halves to the pot during the last 2-3 minutes of cooking for extra flavor.

    7. Taste and adjust the seasoning with salt if needed.

    8. Serve the Low Country Boil hot, garnished with chopped parsley and lemon wedges.

    Note: You can serve this dish by draining it with a slotted spoon into a large serving platter or directly into large bowls. You can serve it on a newspaper-covered table for an authentic touch. It pairs well with cornbread or garlic bread and coleslaw.
