Cantonese chow fun is a popular dish in Chinese restaurants in the USA. It is made with wide rice noodles, slices of beef, bean sprouts, and scallions. The noodles are stir-fried with the other ingredients and seasoned with soy sauce and wok hay, which is the unique flavor and aroma that comes from cooking in a wok at high heat.

To make Cantonese chow fun, you will need:

  • 8 oz wide rice noodles
  • 8 oz sliced beef (such as flank steak)
  • 2 cups bean sprouts
  • 3 scallions, chopped
  • 3 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp dark soy sauce (optional)
  • 1 tsp sugar
  • 1/2 tsp white pepper
  • 2 tbsp cornstarch, mixed with 2 tbsp water
  • Instructions:

    1. Cook the rice noodles according to the package instructions. Rinse with cold water and set aside.

    2. In a small bowl, mix together the soy sauce, oyster sauce, dark soy sauce, sugar, and white pepper. Set aside.

    3. Heat 1 tbsp of oil in a wok or large skillet over high heat. Add the beef and cook until browned, about 2-3 minutes. Remove from the wok and set aside.

    4. Add the remaining 2 tbsp of oil to the wok. Add the bean sprouts and scallions, and cook for 1 minute.

    5. Add the cooked noodles to the wok and toss to combine with the bean sprouts and scallions.

    6. Pour the sauce mixture over the noodles and toss to coat evenly.

    7. Stir in the cornstarch mixture and cook for 1-2 minutes, until the sauce has thickened.

    8. Add the cooked beef back into the wok, toss to combine and cook for another 1-2 minutes.

    9. Serve hot.

    Note: Oyster sauce and dark soy sauce are optional, you can adjust the seasoning to your taste. Also, you can substitute the beef with other protein such as chicken, pork or shrimp.
