Harasu

Harasu

Harasu is a traditional Japanese dish that is often served as a side dish or appetizer. It is a type of takikomi gohan, which means "boiled rice with savory sauce." The dish is made with glutinous rice, meat or seafood, and vegetables, all cooked in a sweet soy sauce-based broth.

Here's a simple recipe to make Harasu at home:

Ingredients:

  • 1 cup glutinous rice (also called mochigome or sweet rice)
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, peeled and grated
  • 1 piece of dried seafood (such as dried shrimp or seaweed)
  • 2 tablespoons soy sauce
  • 2 tablespoons sake (Japanese rice wine)
  • 1 teaspoon mirin (sweet Japanese cooking sake)
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Sesame oil for serving (optional)
  • Instructions:

    1. Rinse the glutinous rice thoroughly and soak it in water for at least 4 hours or overnight. Drain the water and set the rice aside.

    2. In a large saucepan, heat the vegetable oil over medium heat. Add the diced onion and sauté until softened.

    3. Add the minced garlic and grated carrot and sauté for another minute.

    4. Add the dried seafood and stir to combine.

    5. Add the soy sauce, sake, mirin, and sugar to the saucepan. Stir to combine and bring the mixture to a simmer.

    6. Add the rice to the saucepan and stir to combine with the sauce.

    7. Add the water to the saucepan and bring the mixture to a boil.

    8. Reduce the heat to low, cover the saucepan with a lid, and simmer for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed.

    9. Season the Harasu with salt and pepper to taste.

    10. Serve the Harasu hot, garnished with a drizzle of sesame oil if desired.

I hope you enjoy making and eating this delicious Japanese dish!
